Vegetarian Beef and Black Bean Noodles

Hi everyone!I really wanted a big bowl of noodles for a quick mid week meal, this is what I came up with. A dreamy mix of Vegetarian Beef and Black Bean noodles, what turned out to be a great combination. While this dish has similarities to Jajangmyeon, noodles you will crave after watching many Korean dramas, it is in my opinion a chow mein dish as the noodles are drier. Nonetheless, I was still pleased with the outcome and found a new favourite of mine that is easy to make when you don't have much time spare.


For this recipe I used vegan beef strips made of soya protein, unseasoned they appear unappealing, once they are fried with the sauce and vegetables they taste great! If you are vegetarian I would recommend finding a meat substitute to complete this dish, however it is not essential and it will still be delicious without. It would also be great with seafood such as prawns or squid.


The simplicity of this dish makes it adaptable, it should take up to 20 minutes to create. Super easy and fulfilling.

For this recipe you will need -

Serves 2 (or 1 person)

  • 150g egg noodles

  • 100g beansprouts

  • 1 carrot

  • 1 red chilli

  • 1/2 large white onion

  • 3 green onion

  • 5 mushrooms

  • Slices of ginger

  • 1/4 cucumber

  • 150g vegan beef strips

  • 3 tablespoons black bean sauce

  • 1 tablespoon dark soy sauce

  • 1 tablespoon sesame oil

  • 1 teaspoon honey

  • Sesame seeds


 

Directions -

  1. Heat wok (or pan) on a medium heat with a splash of vegetable oil. Slice onion, carrot and ginger into strips and add to wok. Fry for 4 minutes. Add vegan beef strips to wok and stir fry for 10 minutes.

  2. Slice mushrooms, green onion and red chilli into thin strips, add to wok along with beansprouts. Fry for 4 minutes.

  3. Add egg noodles to seperate pan of boiling water and allow to soften.

  4. Add black bean sauce, soy sauce, honey and sesame oil to wok and stir fry.

  5. Drain water from noodles and add to wok, mix with the sauce. Then serve with a sprinkle of sesame seeds, red chilli and cucumber for final presentation.

  6. Relax and enjoy!
